Strawbery whole-grain waffles
  • 1 cup whole wheat flour
  • 1/2 tsp ground cinnamon
  • 1 cup unbleached flour
  • 1/4 tsp baking soda
  • 1/2 cup yellow cornmeal
  • 1-1/2 cups water
  • 1/2 cup quick-cooking oats
  • 3/4 cup orange juice
  • 1/4 cup rye flour
  • 2 tsp canola oil
  • 1/4 cup nonfat dry milk powder
  • 3/4 cup finely chopped strawberries
  • 1 tbsp baking powder
  • 1. Get a waffle iron.
  • 2. Preheat the waffle iron. Look at the manual if you don't know how.
  • 3. In a large bowl, mix the whole wheat flour, unbleached flour, cornmeal, oats, rye flour, milk powder, baking powder, cinnamon and baking soda. Stir in the water, juice and oil. Fold in the strawberries. (If the batter is too stiff, use your brain. Add more milk or water)
  • 4. Ladle enough batter into the waffle iron to come within 1" of the edges. Cover and bake, until golden brown.
  • 5. Repeat until all the batter has been used. :D
